100g desiccated coconut
100g caster sugar
1tbsp plain flour
1 pinch of salt
1tsp vanilla extract
2 free range egg whites
Preheat oven to 180°C (160°C fan oven).
Line a clean baking tray with greaseproof paper.
Mix together the desiccated coconut, sugar, flour, salt, egg whites and vanilla extract.
Spoon or pipe the mixture into roundels, spacing them evenly.
Bake for 15 minutes until lightly golden brown in colour.
Cool and enjoy!
